CAPSTONE PROJECT

Implementation of a Community Garden to Help Combat Food Insecurity on College Campuses

In my Food and Nutrition Senior Seminar class, the course of semester was dedicated to the research and implications of our capstone. A capstone project is designed for each student to research a topic of their choice on a problem that they have seen throughout their community. Megan, my partner, and I wanted to help combat food insecurity among college campuses with the implementation of a community garden. We chose food insecurity as our topic because this is a rising health epidemic that is occurring among college students, 58% to be exact nation wide. Also writing my grant proposal for a community garden was another initial spark for the idea of our capstone. It was ironic enough that in July of 2018 BGSU’s campus had received funding from the Office of the President to install a community garden. When the garden was installed there was limited help and knowledge about the garden. In August of 2018 Megan and I met with our mentor, Dr. Rosser, who is apart of BGSU’s Center of Community and Civic Engagement office. From there we went to work on our research. We also helped out with making marketing tools for the garden; also we maintained the garden by watering, weeding, and pruning the plants. We also helped out with a Bowling Green local food pantry by donating food to the community.
